6 Lean Lamb Chops or Lamb Steaks
50g Raw Papaya (made into a paste)
4 Tablespoons Olive Oil
2 Tablespoons Coriander (finely chopped) for Garnishing (optional)
1 ½ Tablespoons Ginger and Garlic Paste
1 Tablespoon White Vinegar
1 Teaspoon Finger Green Chilli Paste
¾ Teaspoon Salt
½ Teaspoon Turmeric
½ Teaspoon Red Chilli Powder
½ Teaspoon Cumin Powder
¼ Teaspoon White Pepper Powder
Pinch of Nutmeg Powder
Pinch of Green Cardamom Powder
1. Make slight incisions on both sides of the lamb chops using a small knife, this will allow the marinade to seep into the meat
2. For make the marination, mix all the ingredients (excluding the lamb chops) together in a blender until a smooth paste has been formed
3. Pour the marination on to the lamb chops and coat the meat evenly with the mixture
4. Leave to marinate for a minimum of 30 minutes or preferably overnight for the meat to absorb all the flavours
5. To cook the lamb chops, put on to an oven tray and cook in a pre-heated oven for 20-25 minutes on 180°C
6. Serve
